I was up bright and early this morning, and got right to cooking. Mom and I had talked about it last night: she was planning to roast a chicken today, and make a meatloaf. We had 2 more eggplants in the fridge that needed to get used before they went bad, so I said I'd make another pan of eggplant parmigiana. I also offered to make a pork roast in the crockpot.
So, when Nougat got me up at 7 this morning, I went out with her, came in, gave her her breakfast, and then, instead of going back to bed like I usually do, I started making eggplant.
It takes awhile, so I figured I'd get it done early, while it was still relatively cool outside, and then, when Mom got up, she could do the chicken.
I tried to be very quiet. I even grated the mozzarella by hand rather than use the food processor, and turned on the task lights under the cabinet rather than overhead lights.
Mom got up just as I was getting ready to put the parmigiana in the oven. Then I got the pork roast in the crockpot, and, while Mom was putting the wash in the washer, I got the chicken seasoned and in the oven as well.
By 9:30 I was done. I wanted to take Nougat outside, but the lawn guys showed up, so we had to wait till they were done. Then we went out for awhile. Mom kept an eye on the chicken in the oven.
The rest of the day was lazy. I took a nap this afternoon to make up for having gotten right to work so early.
As soon as Brother is done watching "The Equalizer" (anyone remember that show?) we're going to eat dinner. We're having the pork tonight.
I was disappointed today. We didn't to see "The Chew", because Obama was in Orlando. I don't care that he came to FL....but really, did we have to watch the cavalcade driving???? It was like watching paint dry. What was the point? When he gets where he's going AND he's ready to give his speech or whatever, THEN interrupt the program (if you must), but who the heck needs to watch cars driving down the highway?? Sheesh!!!
Dinner's done, dishes washed, dried, and put away. Soon it will be time for "Jeopardy". And there goes the day.....
Dinner, btw, was a recipe an online friend gave me. It was delicious, and the consensus was that we should definitely make it again. I did make one change to the recipe. I substituted pork for beef (cause that's what I had on hand). Simple recipe, but it tasted "fancy" (i.e. like it took a lot of work).
