Hallelujah the South Carolina Peacheds have arrived in Oldham County! The Georgia Cherokee Peaches have had their so saw we and fleeting appearance and our local peaches are not ready yet.
Hence, to the rescue, South Carolina Peaches! And of course, that leads to Peach Pound Cake.
Back in Central Texas we happily trekked out to Fredericksburg and Stonewall and sometimes almost alllll the way out to Johnson City to purchase vast quantities of peaches. Cobblers and ice cream and Peach Texas Pecan Pound Cake required enormous quantities of those sweet round fragrant peaches.
Much to my deep shsme, I have never attempted to make Pickled Peaches or Brandied Peaches. For years I used the very good excuse of simply not having enough perfect whole peaches or space and time to can them. Mostly I was afraid to attempt the process all by myself. Even when I received letters and pictures of row after row of gorgeous, home canned Brandy and Pickled Peaches from my cousins. Even my male cousins were cheerily canning their crops of local peaches and peaches from their own kitchen orchards. I still have one photo of my then eighteen year and twirl ve year old boy cousins. beaming proudly in front of a vast old enamel topped table...laden with Kerr jars of firm, sweet, Brandied and Bourbon peaches!
